Armand Arnal is the chef of the La Chassagnette restaurant (1 star), located around 10 kilometers from the Arles city center. Often considered the Prince of Plants, Armand Arnal cooks only what's fresh every day from his garden, a 2-hectare living pantry. Vegetables, fruits, flowers, herbs and aromatics grown according to the principles of organic farming open each dish. Fish and meat from local sources appear as side dishes, or even garnishes, as though to better reveal the rarity of their resources. in the summer, the tables at La Chassagnette are lost in the garden greenery or rest under the cool canopy, with the song of the cicadas and the gurgling of the fountain as background music. In wood, wide and rough, these tables are made for sharing and communion. When the weather changes, they go back to live in the house, whose decor accented with objects selected by India Mahdavi constantly evolves, reflecting the Chef's taste for photography and contemporary art. © Laurent Dupont
