The FKK's FLORENTINE TWO PARING knife is a 100mm long blade, part of our FLORENTINE TWO collection for 2016. It is a western knife with a 50/50 grind, 2.5mm thick 14c28n Sandvik steel hardened at 60HRC and Cryo treated. The handle is made of a Random mix of Kambala, Hard Maple, Tauari and Garapa wooden discs, Coloured Micarta and brass and Stainless steel discs and fitted with sand cast brass bolster and pommel. This is your go to knife for everything you would do in your hands and not on the cutting board. This means that it's most suitable for precise actions like peeling and garnishing.
