Product description
The knife blade is made of corrosion-resistant VG 10 steel with a hardness of 61 (± 1) HRC.
Its blade, sharpened on one side at 16°, offers a special cutting edge designed for extreme precision.
The flat side of the blade is concave, creating an air cushion between the blade and the product to be cut.
Combined with a high, flat blade, the friction is minimized
and ensures perfect cutting results.
