This very rare honey is extracted in July in the Jura. Its harvest is very different from that of flower honey, because the fir tree has no nectar. The bees collect the honeydew secreted by aphids, which they then deposit on the fir trees. Depending on the amount of honeydew deposited on the trees, the harvest can last until autumn.
